As I measure out the flour and water, I can’t help but feel as though I am performing a ritual. The sourdough starter, a living being, is the key ingredient in this recipe for rebirth and regeneration. I carefully tend to it, feeding it with love and patience, knowing that it will soon come to life and bring new life to the bread.

As I knead the dough, I am struck by the transformative power of fermentation. The humble ingredients of flour and water, transformed by the magic of wild yeast and bacteria, become something much greater than the sum of their parts. The dough rises and swells with vitality, becoming a thing of beauty.

The oven, a womb of sorts, is where the bread truly comes to life. As the heat envelops it, the bread transforms once more, becoming golden and crusty on the outside, while remaining soft and pillowy on the inside. The aroma of baking bread fills the air, and I can’t help but feel a sense of awe and wonder.

As I savor the taste of the bread, with its complex layers of flavor and texture, I am reminded that every bite is a small act of creation. With each loaf, I am a co-creator, a partner in the miracle of fermentation.

And so, as I brush the flour from my hands and clean up my baking tools, I am filled with gratitude for the mysterious and spiritual side of baking sourdough bread.
